For the Sabji (Stir-fry):
- 3 Tablespoons Oil
- 1 Teaspoon Cumin Seeds
- 1 Teaspoon Garlic (Finely Diced)
- ½ Cup Onions (Finely Diced)
- ¾ Teaspoon Red Chili Powder
- ½ Teaspoon Turmeric Powder
- 1 Cup Tomatoes (Finely Diced)
- ½ Tablespoon Ginger (Sliced Thin)
- 1-2 Green Chili (Sliced)
- 1 & ¼ Teaspoons Salt
- 1 Teaspoon Mango Powder (Amchur)
- 1 Teaspoon Garam Masala
- 2 Medium Potatoes (Aloo) (Peeled and Sliced)
- ½ Pound Cauliflower (Gobi) (Washed and Cut into Florets)
- 1 Tablespoon Cilantro (Chopped)
Optional Additions:
- ½ cup peas (for extra fiber)
- ¼ tsp asafoetida (hing) (to reduce Vata imbalance)
Instructions
- Heat oil in a pan over medium heat.
- Add cumin seeds and fry until they crackle.
- Add garlic, cook for 30 seconds until light brown.
- Add onion and fry until light brown.
- Add turmeric and red chili powder and stir.
- Add tomatoes, ginger, green chili, salt, dried mango powder, garam masala and mix well.
- Add potatoes, stir well and cover the pan with a lid.
- Let the potatoes cook for 3-4 minutes on medium flame.
- Add cauliflower and stir everything together.
- Cover the pan with a lid, let it cook for 6-8 mins on medium flame, stir occasionally.
- Turn the flame to low and cook for 10 minutes, til the potato and cauliflower are tender but not soggy, while occasionally stirring in between to prevent from sticking to the bottom.
- Finally garnish with cilantro and serve hot.
